Position Overview:
We are seeking an experienced and visionary Executive Chef to lead our culinary program. This is a rare opportunity to helm the kitchen of a high-end omakase concept, working with the highest quality fish flown in daily from Japan and globally sourced seasonal ingredients. The ideal candidate has deep expertise in Edomae-style sushi, an obsessive attention to detail, and the leadership skills to inspire and manage a top-tier culinary team.

Key Responsibilities:

  • Lead the creative direction and execution of an evolving omakase tasting menu

  • Oversee daily kitchen operations, ensuring consistency, precision, and excellence

  • Source and manage premium ingredients, including relationships with Japanese fish markets and specialty purveyors

  • Train, develop, and manage kitchen staff with a focus on discipline, teamwork, and craftsmanship

  • Ensure full compliance with health, safety, and sanitation standards

  • Collaborate with FOH and ownership to ensure a seamless, high-touch guest experience

  • Manage food cost, inventory, and kitchen labor to meet financial targets

  • Maintain the highest level of professionalism and integrity in the kitchen

Qualifications:

  • Minimum 10 years of culinary experience, with at least 3 years as Executive Chef or Head Sushi Chef in a fine dining omakase or Michelin-starred environment

  • Mastery of traditional Japanese techniques, including knife work, aging, curing, and rice preparation

  • Proven leadership and team-building skills

  • Experience with menu development and seasonal ingredient sourcing

  • Strong understanding of kitchen operations, inventory management, and cost control

  • Ability to work under pressure while maintaining excellence in execution

  • Japanese language skills a plus, but not required
